Around Christmastime a coworker of mine brought in an amazing homemade bread to share with us. It was sweet and dense and had carrots in it, so I knew it was super good for me.
Well, it was so delicious that I had two pieces (ok, maybe three). So when it came time to make something for a day with the ladies I thought this would be just the thing. I'm bringing it today-hopefully the loaf will make it out of my kitchen.
There are lots of recipes for Morning Glory bread out there-you can find both low-carb and low-fat versions, and recipes using different fruits-pineapple, apple or pear are popular choices. I chose to add raisins to mine. However you decide to make it, you'll love it.
Morning Glory Bread
- 1 1/2 cups flour
- 1/2 tsp salt
- 2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp cinnamon
- 2 very ripe bananas
- 2 eggs
- 3/4 cup sugar
- 1 tsp vanilla
- 1/2 cup vegetable oil, or melted butter
- 2 carrots, grated (should be about 3/4 cup)
- 1 cup chopped walnuts
- 1/2 cup shredded coconut
- handful of raisins (optional)
- Preheat the oven to 350°F.
- Spray an 8x8 square pan with cooking spray then line the bottom with parchment paper (or aluminum foil like I did-I had no parchment paper). Spray the parchment paper with cooking spray too.
- Combine flour, salt, baking powder, baking soda and cinnamon in a bowl. Set aside.
- Mash bananas in another bowl, leaving some chunks.
- Add eggs, sugar, oil and vanilla, and stir well.
- Add dry ingredients to wet.
- When almost combined, mix in carrots, walnuts, coconut and raisins (don't over mix).
- Pour the batter into the prepared pan.
- Bake at 350 for about 45 minutes, checking at the 30 minute mark. (You'll know it's done when a toothpick inserted comes out clean.)
- Cut and serve warm.
